Barbecue Competition- Team Rules and Registration
October 3- Holland park
Thank you for your interest in competing in the Fourth Annual GBarbecue. Here are the rules:
Basic Rules
* Every team must have at least one lawyer who shall be present during the cooking. Otherwise, have as few or many people as you want, lawyers or not.
* Every team has a Team Captain. If there is only one lawyer, that person is the Team Captain. If there are multiple lawyers, the team can decide which of the lawyers is Team Captain.
* Team registration will be closed prior to the day of the GBarbecue, so don’t wait to register.
Meat
*The GBar will provide each team with bone-in Boston Butt, at least one per team but as many as two, to be determined in advance. The meat will be available for pick-up on Thursday, October 2 at Good To Go GVL (209 W. Antrim Drive) between 4:00 p.m. and 5:00 p.m.
*The GBar will provide each team with a box of food safe gloves which must be worn when handling the meat (whether raw or cooked).
*Teams may prepare the meat in whatever fashion they choose.
Cooking
*Cooking to be onsite at the green space at Holland Park (813 Laurens Road). This is the same locations as in 2024. Set up cookers OUTSIDE the grassy area along the barrier as show in the red boxes in the photograph.
*Cookers using wood, charcoal, or gas are all acceptable. No open pits.
*The GBar will provide each team with a large trash bag. Each team must clean up its area and take the trash bag to the dumpster.
*Teams provide their own cookers and fuel and any other things they need for cooking other than the meat, box of gloves, and trash bags from the GBar.
*After cooking, all meat must be maintained at a minimum temperature of 140 degrees F in a covered container until turned in for judging.
*You must bring a table to set up and provide samples of your smoked meat (sample cups provided by the GBar) after judging is complete.
Judging
*The GBar will provide clamshells or similar for turn-in. Nothing will be in the turn-in box other than the pork to be judged. Meat may be sauced or un-sauced. The number of separate pieces of meat in the turn-in box will depend on the number of judges.
*Turn-in will be between 4:50 p.m. and 5:05 p.m. on Friday, October 3.
*Entries are judged on the following categories: Appearance (0-3), Aroma (0-2), Texture/Tenderness (0-5), Taste (0-5) and Overall Impression (0-2). The maximum score per judge is 17.
*The entry with the highest point total is awarded The Wicker Cup, named for the late Grey Wicker.
Eating
*During the judging, the GBar is hosting our members for a dinner of pork barbecue, sides, and lemonade/tea (alcohol available for purchase at Double Stamp Brewery).
*Each team registration includes up to five tickets to the dinner that evening, depending on size of team and for use by team members only.
Misc
*There will not be any electrical or water hook-ups. Bring your own power and water.
*The GBar reserves the right to make final decisions on rule adjustments, interpretations, disqualifications, etc.
*There is no cost to participate this year, and please be mindful the whole point is to have fun with other lawyers.
Other Things You Must Know
*You are responsible for policing your own area with the trash bag (provided by the GBar). We want Holland Park to have us back so keep it clean. You must take your trash bag to the dumpster before leaving the GBarbecue.
*Do not bring outside alcohol.
